Chilled Tofu with Bonito Flakes and chopped Spring Onions

One 230g silken tofu, mildly chilled

2 teaspoons freshly toasted and ground white sesame seeds

1 teaspoon minced fresh mitsuba / italian parsley

1 shiso leaf /Japanese basil (cut into ribbons)

Reduced-sodium soy sauce, to be used at the table

1.5g small bonito flakes

2 teaspoons minced spring onions

1. Gently rinse chilled tofu under cold water and drain well.

2. Arrange the garnishes. Ground sesame seeds can be placed in a small shallow bowl with a tiny spoon for serving. Put the minced mitsuba and slivered shiso leaf on a small plate. Bring these garnishes to the table, along with a bottle of soy-sauce.

3. Prepare the tofu by carefully cutting the block into 4equal pieces. Place each block on a small plate and top with a portion of bonito flakes and minced spring onion.

4. Diners will flavour with sesame seed and soy sauce.
