Spinach with Bonito Flakes
One 500g bunch of spinach (remove roots and coarse stems bottom)
2 tablespoons dashi
1 1/2 teaspoon reduced-sodium soy sauce
1 teaspoon rice vinegar
1/2 teaspoon granulated sugar
pinch of salt
1.5g small bonito flakes

1. Place the spinach in a large bowl of water. Rinse off dirt but do not allow the bunch to separate.
2. Bring a large saucepan of water to boil. Carefully add the spinach and cook over medium-high heat for 30s, keeping the bunch intact. Drain & refresh under cold water. Gently squeeze the spinach to release excess water.
3. Blend together the dashi, soy, rice vinegar, sugar and salt in a bowl until sugar dissolves.
4. Cut the spinach into 3cm length.
5. Serve the chunks of spinach in a serving bowl, pour soy-vinegar mixture over them and garnish with bonito flakes.
