Recipe from Japanese Woman don't get fat or old - Country Power Breakfast

Country Power Breakfast

1 25g hot cooked rice

4 large eggs

1/2 of a 8x13cm block of thick-fried tofu

12 cherry tomatoes

2 sping onions (roots and top cut off, with white and green parts thinly sliced & kept separate from each other)

100g mixed cooked vege (french bean, carrots & corn)

900ml dashi

2 1/2 tablespoon red or white miso

1. Place the eggs in a small saucepan with water to cover. Bring to boil and cook for 7min. Remove the eggs and cool. Peel the egg and quarter them.

2. Bring the water to boil in a small saucepan. Add the tofu & gently boil over medium heat, turning occasionally for 1min; drain. Cut into small squares.

3. Lay out 4small soup bowls. In each one, arrange a portion of egg wedges, boil tofu squares, the white part of the sliced spring onions, tomatoes, cooked vege & cookied rice.

4. Place the dashi in a large saucepan & bring to boil. Whisk the miso and turn off the heat. Ladle the hot miso broth over the ingredients. Garnish with green part of the spring onion.
